Saperavi (which literally means "dye") is an acidic, teinturier-type grape variety native to the country of Georgia and references the dark-colored wine which make it suitable for extended aging. What is teinturier you ask? Teinturier is a unique grape variety with dark skin and a pink-tinted pulp.
Due to the grape’s beautiful, intense color and strong acidity, Saperavi has often been used to bring pop to red blends. Today, it’s developing a reputation of its own in single-varietal wines. Saperavi can be made into rosé, semi-sweet, sweet, and fortified wines, but the most typical style is a full-bodied dry red with big-time acidity and robust tannins.
The Saperavi grape is compatible with the cool-climate vineyards of the Northeast and the East Coast because it’s an adaptable wine grape capable of producing large yields without sacrificing fruit quality. Saperavi has been grown here in the Finger Lakes for years and we are seeing more wineries produce wines from this grape.
We’ve gathered seven FLX producers of Saperavi for an evening where we will discuss all things Saperavi, while enjoying their wines paired with small bites from Around the Corner Catering.
